Peter's Birthday Dinner

This past week, our good friend Peter celebrated his birthday and we all went out to a fancy wonderful meal at Regi's. I got something I have never eaten before as a part of a goal to try more new things and be more experimental in the food department. I had belgian waffles and friend chicken with chicken gravy! It was delicious! Below is us enjoying dinner at Regi's! 



State Patty's Day! 

This past weekend we took our adventure North to Penn State to enjoy a little tradition known to them as State Patty's Day. This was an amazing time and I had an absolute blast ! 
It was so nice to be with the girls for the weekend and we really kept it college. We went to a bar and did some serious day drinking and then followed it up with a good old middle of nowhere strip club called the end zone in PA. nothing but class...
Good times for sure!

The IRISH WAKE Challenge!

This past weekend, Braden and my friend Peter decided they can take on the HOTTEST wings at Delia Foley's an Irish Pub in my neighborhood. Our bar tender told them "I have never seen anyone finish a plate of them, ever." Being the cocky bastards that they are they decided that of course they are gonna be the exception to this very clear rule so they set out for the challenge. 

The people: Peter Eshelmen, Janell Lewis, Braden Spells, and Jordin Fenn-Hudson

The Challenge: Eat an entire order of wings from Delia Foley's called Goodbye Cruel World

Our waitress was so flabbergasted that they wanted to try that she wouldn't even put the order in until they tried 'just a bit' of the sauce on its own so she brought us a sample. We all four tried it and I cried. See Jordin's reaction below....

 Priceless.

The boys decided they could not eat the highest level of sauce so they opted for the 3rd highest which is called IRISH WAKE....not quite as hot but still very scary...

This mission they accomplished but with red faces, 2 trips to the bathroom, and some tears.

Verdict: Mission Failed

Better luck next time boys, don't tryout for Man vs. Food anytime soon.

The food that inspired me!

Background...my whole life I have eaten basically whatever I wanted and of course, as a result of this--put on some pods in college and generally developed some pretty bad eating habits. Recently, the past year or so, I have been increasing my fitness and health and trying to eat fresh and experiment with cooking. It is not until recently that I really feel like I can try going deeper into cooking and fitness explorations because for the past year I have been "relearning the basics" and undoing a LOT of bad habits such as 3 pieces of toast for a late night snack with butter and loads of jelly :)

The past couple of weeks the fiance and I have been trying to eat more balanced dinners and thus, begins the blog and the motivation. Some food choices as of late have been....

 Grilled asparagus with Olive Oil, sea salt, pepper, and garlic. Rice GUMBO, Flounder with lemon pepper and fresh basil and a crescent with butter (a guilty pleasure I will not give up but that I need to eat in moderation)
Valentines Dinner--Asparagus, pasta with homemade vodka sauce!
Asparagus (Im seeing a theme) sautéed mushrooms, grilled salmon with parmesan cheese and honey dijon mustard!

So, now you see the motivation and I am gonna keep it going!

I am a 6th grade teacher and recently engaged!
